Alma’s Taste of Mexico

Alma at the pass

As Junior Sous Chef at Murmur, Alma has combined her creativity and flair with a love of Mexican ingredients and techniques to help us produce some truly exceptional dishes.

Born just thirty minutes from Acapulco, Alma grew up surrounded by the extraordinary flavours, colours and smells of Mexican food which inspired her to follow a career as a chef. (This period of her life also saw her achieve a black belt in Taekwondo!)

After attending Centro Universitario Rafael Haller – a culinary school just outside Mexico City for four years, she travelled to New York where she met and fell in love with her husband, Will, who persuaded her to move to Brighton with him.

She’s since worked at some of Brighton’s best loved restaurants including Food for Friends and Senor Buddha – where she honed her talents, grew as a pastry chef and developed a love of vegetarian cooking.

This was followed by a stint running a creperie in Paris before eventually joining the team at 64 Degrees. The two years spent there saw Alma introduce countless dishes on an ever-changing menu and was an obvious choice to join us here at Murmur, where’s she’s brought her unique and wonderful brand of cooking.

We are deeply proud of Alma, so it’s with great pleasure that we invite you to join us in a celebration of Alma and her talents on the 15th of March for an exclusive tasting menu, showcasing everything that her native Mexico has to offer!

Alma has created five courses, each highlighting a specific region of Mexico – kicking off with steamed tamales inspired by ancient Mesoamerica, moving on to a spicy, vegetarian aguachile, a rich venison mole and a red mullet red pozole stew. The evening will finish with dulche du leche, churros and margaritas.
